Homeade Curried Lentil Soup…

I love anything “curried”, so yesterday I took an old lentil soup recipe,  added some curry, celery and potatoes… and voila! I turned it into a “curried lentil soup”.  If I may say so myself, it was delicious…and healthy too!  Here it is:

Curried Lentil Soup

Ingredients

2 tbs. olive oil or coconut oil

Madras Curry powder

Three medium potatoes cut into tiny pieces

2 cups spinach or kale chopped

3 carrots chopped

3 stalks celery chopped

1 onion chopped

2 cloves garlic chopped

1 cup pearl couscous

1 cup quinoa

1 cup chicken broth or vegetable broth

1 cup water …may add more

Simmer garlic, onion, celery, carrots, potatoes, and curry in oil for a few minutes.  Then add lentils.  Stir ingredients while heating for about 10 minutes to coat the lentils and vegetables with oil and spice.  Place ingredients into larger pot and add broth and water.  Increase heat and bring to a boil.  Add couscous, quinoa, and spinach.  Boil for a few minutes and then bring heat down and place lid on top.  Cook for 40 minutes or for as long as you have over low heat.  Remove cover and simmer until eating.  Enjoy with fresh whole wheat bread and a salad for an incredibly healthy meal.

  1. ummmm it may be just me but I don’t see how much lentils to put in this recipe. I would love to give this a try.
